Oh that adorable Laughing Cow. In the early 1990′s, when I was living in Spain, I fell in love with what I believed was an unusual product. It was a processed cheese which came packaged in individual foil pieces. These little foil pieces were placed together to make a full circle, and were packed in a small, round, flat, cardboard box.
The outer box was emblazoned with a cartoon cow in an open-mouthed laugh, with wheels of its own cheese hanging from its ears like gypsy earrings. I fell in love with this crazy cheese and its funny name, “La Vaca Que Rie” which means “The Cow That Laughs”.
I utilised these little processed cheese pieces in everything. It is a semi-soft cheese, so I loved to spread it on bread or crackers. My favorite use was melting it into pasta sauces. However I also could not resist popping the bite-size cheeses in my mouth and eating them one by one. I had to be careful not to eat very much on hand as I would consume them compulsively the way other people eat chocolate bon-bons.
When I left Spain to come home to the United States Of America, I thought I would miss my new favorite snack. To my surprise, when I came home, I found this adorable little cheese had crossed over into food markets all over my home country. The Laughing Cow is originally from France where its name is La Vache Qui Rit. This happy, laughing farm creature is made by Fromageries Bel (Bel Cheeses) and is their most famous product. It is made of cream, whole milk, and a blend of cheeses, but most especially Comte.
The cheese makers at Bel have added a lot of new flavours through the years. Right now you can eat your laughing cow in all sorts of flavours like ham, mushroom, onion, or pizza. The cheese was a unique item with limited recognition for a long time and no Laughing Cow cheese coupons available any where. However it only took one brush with celebrity to lift this crazy, little cheese into recognition. Requirement for the cheese went at a record high when the light version was made famous by enthusiasts of the South Beach Diet.
At first I think I was unhappy to notice its recognition climb. These happy, little pieces were my secret. Do not misunderstand me. I was glad to notice the cheese become a lot easier to find anywhere I visit. Warehouse stores started carrying the cheese in large bags. That should make me happy, correct?
