The Best Party Treat: Roasted Bell Peppers And Bufala Mozzarella Bites

You are hosting a barbecue party at home. While the barbecue is still sizzling in your backyard, you caught a sight of incoming guests that surprisingly arrived earlier than expected. You are a little distracted as you prepare the other kinds of food you wish to prepare because you want to entertain the people who just arrived. You then remembered that your grandmother used to serve you an appetizer that has become the family’s favorite for ages: the Roasted Bell Pepper and the Bufala Mozzarella Cheese.

You ran to the notebook you have inherited from your grandmother and decided to make the said dish. You knew exactly how to make it back in college without the notebook. But you seem to have forgotten how to do it over the years. Looking through the notes, you wish you remembered all the steps on how to do it by heart. Thankfully, you were able to find the recipe. Here it goes:

You Will Need:

2 bell peppers, one yellow and one red

1 tub fresh mozzarella, preferably the cherry sized

olive oil

salt and pepper and/or seasoning that you like

3-4 fresh basil leaves

Follow These Simple Steps:

1. Set up the oven to broil. Along with a foil, line a baking sheet on it. Put the peppers on the foil and then put them under the broilers. Take tongs and rotate peppers when you see the peppers turning dark. The goal is to make the entire pepper charred so keep doing it until you see that result on the peppers. Put the peppers in a brown paper bag or in a large zip lock bag. Close. For about 10 minutes, let it steam. Transfer peppers in the cutting board to cool.

2. When peppers are cooled down, skins will slip off easily. Remove all skins and then cut peppers in half, removing stem carefully so peppers don't tear. Take out the seeds with care. Slice each pepper half into about 5 or 6 strips. Then season the peppers.

3. Take out the water from the Bufala Mozzarella balls. Put mozzarella in small bowl and drizzle some olive oil on them. Shake over some salt and pepper and/or your seasoning and toss.

4. Wrap each Bufala Mozzarella ball with a strip of pepper. Secure with a toothpick and place on serving platter. Repeat with remaining peppers and cheese. Slice some fresh basil, if you like, into chiffonade and sprinkle over the appetizers.
